Where do I measure temperature?

I'm thinking about buying an aftermarket temp gauge for my 95 ranger 2.3 because I don't trust the stock gauge. I've heard the normal operating temp is supposed to be around 190*F to 205*F. Is that to be measured at the block, or the coolant, and if so where?? Thanks in advance for your answers.

PS..
the reason why I'm thinking about buying an aftermarket gauge is because my temperature gauge is always just past the COLD mark on the gauge. I've read on this website that that is normal for most people. (Seems weird, like normal is actually low, anyway..) IS that normal for you guys? Is my truck wasting gas by running cold or what?? :icon_confused:
 
Check it at the coolant. As close to the thermostat as you can get.
 
i check at the thermostat housing or right next to the temperature sensor
