2.5L ('98-'01) short on power, sometimes...

Since I've got my 98 2.5L back on the road and handling daily driving duty's I've run into a bit of an issue that has me stumped. Most of the time it drives fine but I have other times where it loses some power for a bit but come back. I can hear and feel the difference, acceleration is extremely slow at that point at best. When it happens most of the time its after I shift gears, predominantly into 3rd or 4th gear. Ive noticed if I press in the clutch then rev it a bit its back to full power, otherwise it works itself out in 20ish seconds. I did plugs 3 years ago, plug wires i believe are fairly recent as well. Unfortunately my dad was under the hood in the last 3 years and I don't know what he's tried to "fix". Where would be a good spot to start digging into it? I've pulled codes and only thing is o2 codes
 
What O2 codes? That would definitely do something as it could be running rich or lean and would tell some of the story.
