I'm looking for a little knowledge. No particular problem, just curiosity mainly.

Which engine sensors are most important when it comes to changes in:

Cold / Warm temperature?? (besides the obvious engine temp sensor)

Humidity??

Temp sensor, IAT ( intake air temperature) ... and thats about it.. if you don't have any problem to solve or any specific question I can't help you more than this lol

on your '89 there isn't much temperature related on the thing. The important engine sensors on yours are MAP sensor (upper firewall on passenger side), crank sensor, oxygen sensor, coolant temp sensor and for a couple things the throttle position sensor

There's a temp related deal on the air filter housing that switches off the normal air flow from in front of the radiator to air from around the exhaust manifold when it's cold out but that shouldn't really change how it runs.
