Proper install order.

The steering knuckle mounts directly to the lower ball joint boot correct? It just seems odd, metal on rubber.....
The ball joint stud is tapered and it fits into a tapered hole. Like Dirtman said, the rubber boot does not bear any load. Torque spec for these is "tight". 1.5-2 ooga-choogas.

75 foot pounds for tie rod castles?
That sounds nice. I don't remember what size studs they are. (Thread diameter) you can look up standard fastener torque specs online. As you get close to the torque spec, watch to see when the slot in the nut lines up with the hole in the stud so you can get the cotter pin back in. Being a tiny bit under or over that torque spec won't hurt anything. But you want the cotter pin installed so the nut can't come loose. It's kind of a safety thing.

Now......the boot on my tie rod for driver side is "sealed" I guess. However the one on the passenger side fell off with no help. Should I be concerned?

Clean the dirt out and stick it back on.

I'm ready to pack wheel bearings. Can someone send a link on the way to do this properly. I have never......big surprise right? Lol

Take a large glob of grease in your palm and jam the bearing into it while rolling it around untill the grease gets inside every nook and cranny of the bearing. Massage it in there with your fingers and what not. There's no wrong way as long as it gets in there nice and deep like....

This is how I was taught.

This is a thing of beauty to me!!!

Wait. How do I get the seal out? Looks like there are more bearings in the back side of my old rotor......

There is an inner and outer bearing. You need to pull the seal to get the inner bearing out, you can use a screw driver and a hammer and hit the edge until you can pry it out. You will destroy it in the process so you need a new one. To install the new one place it on the rotor, place a piece of wood over top and gently wack it in with a hammer. It should be noted you should be using new bearings, you should never put old bearings on new races. The races are pre-installed on the new rotor.
