That's what I was going to say, but yeah. Waiting until you hit 3000 miles will be fine. Oil change shops just assume that people will average 1000 miles a month.There is another factor to consider. Not all engines are perfect. There is a certain amount of blow-by that gets into the oil. Which in turn makes the oil break-down and turn acidic. There is also the collection of moisture in the engine block through condensition.
My mom puts maybe 4000 miles a year on her car. I change the oil with Valvoline Max Life once a year right after my folks leave for Florida for the winter, roll it into the garage where it sits for four months, and call it good. Condensation and moisture in the oil will be extremely minimal if you don't start it up. Those short 2 mile trips will build it up though, try to do a 10 mile stretch once a week to get the oil up to temperature and burn it off.
