How about a Full Sized Bronco? I like the 1980-1986 best. You can put in a real bed to lay on, a small fridge, and tool box/chest back there. Amendable to a ladder/roof rack and is a lot easier to put on a front and rear winch bumper, if you need to do self-recover on a forest road. Plus, lunch box lockers are available front and rear at normal prices under $400 each.

You can get awesome off road retread tires in 31s cheap.
 
An E locker in the front would be a better choice than front limited slip. I would definitely recommend a clutch type limited slip in the rear over an actual locker, Yukon sells an aggressive one that grips well but still operates smoothly. I don't like clicking, clunking, and clanking coming from my rear end.
