Can't figure out what caused it


If this is the case I would replace t-stat, it couldn't have caused the overheating since it was stuck open at the time, but it is stuck open.

make sure you get a 192 or 195degF t-stat

Generally the temp gauge should be between 1/3 and 1/2 after 5 to 8minutes of driving, the sooner the better.
"Cool" running engine costs you money in gas and engine won't last as long.
SAE, the oil testing people, have determined engine oil needs coolant(engine temp) to be above 140degF to start burning off water and gasoline contaminants in the oil, best temp is 190-220degF

Ok I'll have to get to that when I have the money to spare, I drove the truck about 60 miles today, and the temp gauge was sitting in the 1/3-1/2 range you just mentioned.
 
When the hose blew the hose did the temp gauge read hot before the hose let go? Since it seems to be "behaving" temperature wise after replacing the hose it's possible that the hose was just old, and couldn't hold the normal pressure that's in the cooling system. I'd rule out a bad head gasket for now since the temp seems to be ok. Once a head gasket starts to go you would be having overheating problems.

I honestly do not know if it did or not. I was outside of the truck when it happened.
I'm gonna get around to replacing the thermostat here soon since it seems to be stuck open. Truck barely warms up
 
Sounds like it was just time for the hose to be replaced since it hasn't been getting hot after you replaced it.

It is common for the t-stat to fail, and stay open after an overheating.
T-stat is designed to stay open if it overheats, it's a "failsafe" device.
It uses a bi-metal spring to hold the valve closed, as the spring is heated by coolant it expands and valve slowly opens.
If overheated the spring expands too much and can't close valve all the way when cooled.

T-stats can fail closed, I think, it is just a rare occurrence because of the design, I have never run across that but have read about it, assuming those people were correct in the overheating cause.
It would be noticed within 8-10 minutes of startup, never after 15min.
