The problem is that Ford didn't make the Ranger from 2011-2018, so Toyota took over. Ford could dominate this segment with the Ranger and Bronco, although Ford has never really taken the Ranger seriously. They see it as a piece of the market pie in truck sales, but it's not the F-150 that Ford focuses much of its life around.
I saw some new Ford Rangers and some fullsize Ford trucks at Overland Exo in 2019:

There is so much to see, do, and learn there. I'm sure when the new Bronco is out you'll see some companies there with some Bronco's setup to get a piece of the market.
The Mountain West event is new. The West event was rescheduled from spring to fall. I know the West event draws people and vehicles from around the world.
But back to what you said, it's up to us the owners and enthusiasts to bring Ford in to the overlanding world and start attending these events. I plan to go back someday.
