I would think most any 20 footer would be fine. you figure an average 20ft fiberglass planing hull is between 2500-3000lb dry weight, add up to 100gal of fuel (worst case scenario) at 6lb/gal is another 600, another 600 would be a very heavy 200hp 4 stroke which would likely be more power than needed on a 20 footer. plus maybe 700 for the trailer if its a tandem axle and 200 lb of gear. All that would equal 5100lbs at kind of a worst case scenario. It is likely that you would hold less fuel, have a smaller lighter motor and the dry hull would weigh less too. my biggest concern would be good trailer brakes if you are towing it any distance.
Just add it up: dry hull weight, weight of motor, how many gallons of gas x 6.1lb/gal, weight of trailer, weight of gear carried. compare that to the vehicles max tow rating when stock then compare current drive ratio to stock drive ratio.
