I have a 302 motor I am trying to get info on. I've searched the internet and can't seem to find codes that are located where mine are at. Hoping someone on here can help me figure out what I've got.

Looks like E7TE casting number comes out to an 1987, 302 Windsor small-block, 2-bolt mains

87 wasnt a bad year for 302s. I think they made like 185hp and 270ish ftlbs.

E7TE identifies a casting introduced in 1987, it doesn't mean it's an 87 engine. The only 302's with more than 2 main cap bolts was the Boss 302, Chevy often used 4 bolt mains in a failed attempt to keep their grenades together. The heads used on 5.0 Mustangs from 1987 through 1995 were marked E7TE and they're decent heads. That's actually what I used on my 351. If it was a Mustang engine, it would have made 225 hp but you can easily do better.

In theory it could be an 87-93 correct?

It's a truck engine. And according to Ford E is eighties and it was cast in 87. If it were any other year it would be 4 or 6 or 9 etc.

An E7 casting number identifies the first year of that block, the casting number isn't the date code, that's in a different spot.

Possibly 87-95 in a Mustang, 87-96 in a truck or as late as 01 in an Explorer when the 302 went away.
Didnt the blocks change in 94 with the switch to rollers?

Mustangs got rollers in 85. I suspect Ford used the roller block with flat tappet lifters until they decided to convert trucks to rollers, rather than cast 2 different 302 blocks or they used up existing stock in trucks. They don't spend money without reason. When compression dropped for the 73 model year, 302's got an additional .023" of deck height through the 76 model year, I had heard they did that because they had a warehouse full of existing pistons.
