I just like to put it in a dehydrator with some of the Gander Mountain deer jerky seasonings and it lasts forever.

kinda suprised no one has mentioned canning venison. with the seasoning added during the canning process, much of the 'gaminess' is cooked right out. i use it like roast beef when opening a jar. great on sandwiches, with potatoes and gravy, in pasta dishes, etc.
just a thought.

We always had venison when I was growing up. We butchered our own meat. One thing you always have to be carefull of is no fat from the deer. If it gets cooked with the meat it'll ruin it. Tastes awfull.
My favorite recipe is simple. Cut the meat into small pieces, roll it in flour and fry it in a hot skillet with about 1/8 inch of oil until the pink is just gone. A little salt and pepper and serve it up like a plate of candy. I don't like anything to hide the flavor of the meat.
My stepmother used to roast the neck. HONEY! Oil up my rifle. we're going hunting.
I can recall only one deer we couldn't stand to eat. It had a sour smell while it was hanging, and it was worse when we cooked some of the meat.

was it gutshot by any chance? a few years ago my grandpa gutshot a deer and all the meat tasted like sh**, especially the inner loins :bad:

that was the only time venison was ever wasted in my family.

that was the only time venison was ever wasted in my family.
Gutshot deer can be saved... but you have to get to them right away, get them gutted right away, and wash it out as soon as possible. Usually if I gut a deer and find the stomach or whatever is tore open, I clean it out as good as possible, try to wash it out some with my canteen, and then get moving. If there is a creek or stream nearby I'll go there and rinse it out some. If not I get home and take a hose to it. If you get it washed out right away it's usually alright.

When we skin and quarter 'em, we wipe all of them down with hot water and vinegar. Make sure the meat is good and clean. I've brought home a couple deer that the stomach turned into collateral damage.... guess I need to use a smaller gun...:icon_rofl:

Here in central SD the deer here are grain fed (corn,wheat, soybeans and others) so they are very good to eat no gamey tast to them. I use to live in Wyo and there is a big differce in tast in the meat on what they feed on.
We will get our deer home skin it and butcher it with in 24 or it will frozen stiff, we have a late Nov to mid Dec season.We do steaks, roasts, stew meat and jerky. We bread our steaks in flour and fry it whith onions.

You say that like its a good thing. Where I come from you eat deer for the gamey taste. If you don't want the gamey taste you go the BK.
