We make tortilla pizzas fairly often. If you have a rack with fine enough spacing that stuff won't fall through, or a perforated pizza sheet, I think you can get them to crisp up pretty well. When we use baking sheets and they come out a bit on the floppy side, they just get folded over and become calzones.
