What’s for dinner tonite!


We make tortilla pizzas fairly often. If you have a rack with fine enough spacing that stuff won't fall through, or a perforated pizza sheet, I think you can get them to crisp up pretty well. When we use baking sheets and they come out a bit on the floppy side, they just get folded over and become calzones. 😀

I'm going to have to try that roti version soon, great idea!
 
I make veggie wraps for lunch frequently with the low carb wraps. My wife loves them. Never thought about making pizza with them... but I'm gonna try it.

I know the Naan bread pizza rounds or flat breads make a good pizza...

Last night I made Jerk Shrimp and Grits. These were spicy enough the make my scalp sweat... but damn they're so good.

No pics, but a TB1 w/ field peas and a cup of rice. Sounds good, and it was, but probably not as good as you're thinking. Steak was cooked on an electric grill (George Foreman), the field peas were out of a can, and the rice was the heat and eat minute rice.

Being single I can afford to spend more on ingredients, but difficult to get fancy or put in a lot of effort to cook for one.
 
Is TB1 a T-Bone?


You could cook for two or three and meal prep it. I do alot of that... but i don't mind eating leftovers.

Yes, not sure why I wanted to type it that way at that moment.

The George Foreman isn't big enough for cooking a few steaks at a time. Don't do a regular grill because I don't really have the place for one. I usually think about fixing dinner too late to start the charcoal anyway. Might be getting gas grill soon, one dad picked up cheap and might have fixed, but never really got around to using. Even then it was raining, so wouldn't have gotten used today.

Really need to check on that grill. Might be a partial solution for an upcoming project. I am going to have to start taking a serious look at some soft spots in the floors of my house. Was hoping I could get relocated and let the next owner deal with it, but doesn't look likely right now. Probably going to have the kitchen torn apart for a few weeks/months for repair and remodel, cause I certainly can't afford to pay someone to do it. Was planning to just sell as-is when the time came because the loss would likely be be less than the repairs, epsecially if I have to pay someone to do it.
