truck suddenly started running like crap

I replaced the drivers side with a new o2 sensor and the passenger side with a used one I had on hand. Running good now.
Now if something the same symptoms happens on a different vehicle, could I disconnect the o2 sensors and then would the computer default to a "limp home" mode?
