You could comfortably fit a 265-75-16 (31-10.50) but the biggest would be a 285-75-16 (33 -11.50). May need to put a couple cranks on the torsion bars for these.

3'' lift

i got a 3'' body lift but what i need to know is the biggest tire i can fit on my stock rim 16x7??

i would always like to keep the tire about 4" wider then the rim at most, so, for ur rim it would be a 32x11.5r16

im in the same situation as you, i have a 3" PA body lift ready to go on, and want to put 285/75r16's procomp mud terrains, but am worreid about rub!

for 285/75r16s they recomened a 7.5 rim width...so will 7 work?anyone recommend a good aftermarket rim??

a 7" rim would work fine....

+1 the 7'' will work, meaning you can mount the tire on it but you will not get optimal performance or tread life out of the tire running on a narrower wheel than is reccomended. putting it on a 7" rim will tend to pull the edges of the tread up and the tire wont last as long as it would if you had it a proper size wheel and probably wont ride as smooth either. with that said, to answer your question, you can put as wide/big of a tire as you want on that wheel, but if it is too wide it isnt going to perform like it is supposed to.

can you recommend a 16x8" rim to go with the 285/75r16's? do you think i'll need an off set rim...or would the 285's rub on the stock ones??? i don't want to get these tires than find out that they won't work on my truck

i cant say for sure, but i think you will be alright as far as rubbing with the stock rims, im sure wherever you buy them from will let you testfit one on the front to make sure they dont rub before you buy them. and yes a 16x8 is perfect for those tires, but if you do consider getting rims and tires you might want to look at some 15''s, they would be a little cheaper.
