Im looking to drop my truck a little. And was wondering if wheel and tire size is something I should choose before hand.

Drop it first. You won't have rubbing issues with those tires unless you go so low that you need to start cutting the frame etc.
 
Tuck them lil 14's . Shackle flip is next to free if not a couple bucks for new bolts and lock washers . That's good for almost 2 inches in the rear . And should level it out . Then from there axle flip in the rear for a 3-4 or get a expo rearend for 4-5 in the rear . Ibeams for the front for 3" drop. After that 2-3 drop coils if wanting lower .
