Coolant stays good, no consumption
I tested with L'odb1 and I only have the code 77 (Operator error during Dynamic Response Test / Wide Open Throttle not sensed) do you have a track, the timing of the advance has not changed anything.

If you have white smoke, you have coolant getting into the cylinders somewhere.

Have you taken the vehicle for a long drive yet?
Perhaps its just condensation from being cold?
What are your outside temperatures where your at?
Sometimes there is oil and crap being burnt off after a rebuild and it takes a little while to burn off.

Here the weather is cool 4-5 ° Celsius, humid and windy.

How many miles on the engine when you changed head gaskets?
Sometimes changing head gaskets can make the engine an oil burner where it didn't do that before.
Pull your spark plugs and if they are covered in a black, somewhat oily residue then suspect the rings.
If they have a black fluffy deposit then suspect too much fuel...its running rich. Look at the ECT sensor and o2 sensors.
If there is coolant getting in the cylinders then the spark plugs will look like they are steam cleaned.

By idle sensor I assume you mean Idle air control valve. There is no way an IAC can cause your symptoms. Iac valves control idle speed only. There's nothing there to make "smoke and mud".

no, I thought rather Manifold Pressure (MAP) Sensor ,

for what I drive, not more than 20-30 miles, last week I changed the ho2 sensor, maybe the catalityque pot was dirty and for that a little mud comes out
