Needed a cheeseburger fix. Decided on mushroom/Swiss.

I Marinated the mushrooms in a garlic herb sauce then reduced 2 slices of Swiss add 2 minutes and 44 seconds per side with salt/pepper. Served with a 23 oz mug, ice on the bottom sugar free strawberry/mango, augmented with 6 frozen strawberries to help maintain the cool.

I was given a Subway gift card the other day when I was at the re-entry office.

So I'm having a Subway Club with the works on it.

However I'd like to have @DeeRanger 's hash even more.

So what do you say @DeeRanger do you want to trade?
I love Subway sandwiches. The red flannel hash is easy. Diced potatoes, carrots, onions, green beans, ground beef or turkey and 'diced pickled red beets'. The beets give it the red flannel look and taste. Fry it all up till it's all cooked through and enjoy. ( I love it the next morning with two fried eggs on top ). Stay well.

Not dinner...

But my Riley's order showed up today.

Good stuff!

So i made burrito bowls tonight...

I'm down 28 lbs since 1/6/25. Part of what keeps me on track is I've been meal prepping the left overs to keep portions in check. It's working... slowly but surely.

Beef Barley Soup.... did I mention it is raining (and miserably cold) here...
It is a slight variation of Bon Appetite's version... I used to watch their videos before COVID and BLM and they canned almost all of their white staff (and changed to a pay to read recipe model).. unfortunately now the link is gonna be your only one free preview if you follow...

Beef Madras (it's British Indian not authentic Indian), and a cup of green tea.

I'd try that...

I would pass on the tea though...

Hot or iced... just never hit my taste buds well.

I was raised Tex/Mex in the panhandle region (way flippin south CO), so the majority of my skills are Tex/Mex and German (mom is German), but I got a smattering of Italian and Irish recipes in there (grandad was as Irish as you get), but the Indian and Thai is a recent skill I am polishing more and more each time. One of my favorites was a simple 'country captain' made with chicken.

Green tea is just bleh to me almost all the time, but I drink it with chinese or curry since we can't get any white tea in the podunk sticks where I live. I'm a classic black pekoe english tea guy.
