What’s for dinner tonite!


Well just like Gump, I stuffed the crockpot and let it ride with minimal review:

I figured this thread would be filled with photos of Corn Beef, Cabbage, Onions and Potatoes.
FWIW, I used to make an authentic Irish meal for today, but I make meals for everyone in the house and that includes senior citizens that are set on certain things and I bow to the wishes of the masses.
(The irish didn't really have many cows - that was an England thing... corn beef is a modern tradition that started in Chicago if I remember right - the Irish ate a good hearty brown sauce based stew made of pork)

The last time I made the authentic Irish was 2021, so I'll include that and the recipe:
(that was a bachelor feast since everyone was sick with covid and we stayed away from each other - hence the fine china)

Skipped pizza night last Saturday, felt sort of cheated 😭
This was a tasty effort. New brand of pepperoni, double jalapeno, mushrooms and oven baked savory bacon extra sauce and extra cheese..

No pics, it was corned beef and cabbage/potatoes/carrots last night.

But with the weather slowly improving, there’s probably going to be a glut of grill cooking pics coming from me. I do grill randomly throughout the winter, but I don’t always take a phone out during the winter.
 
I made shepherd's pie last night, substituted a cup of dark Irish beer for the beef broth while I was cooking the beef and veggie mixture. My wife and girls all wolfed it down, barely leaving enough for lunch today.

Cilantro lime rice...

Pinto beans with corn peppers and onion...

Fresh pico de gallo...

Turkey burger taco meat...

Sharp Cheddar...

Dollop of Daisy over a bed of iceberg with a couple crunched up tortilla chips.

It's now my wife's favorite.

AFAIK a Canadian dessert brought over from Scotland called Matrimonial Cake ( date cake ). I used strawberry jam instead, and coconut oil instead of butter. Its about as basic a cake as can be made, 1 cup rolled oats, 1 cup flour, 1/2 cup butter (oil), 1/2 cup sugar, 1 tsp baking soda, and a filling in the middle. My mom made this a lot...
