What’s for dinner tonite!


So, my post back awhile ago about the Jambalaya… it was excellent. I could probably share the recipe if anyone wants it.

Thursday I made my Haluski (however you want to spell it), but used Irish butter. Huge difference, everyone smashed on it hard. So that is getting the change to only using Irish butter

I like cooked cabbage...

I agree with butter... you have to have it. I try not to overdue it. But even with dirty rice... a bit of butter to finish it off. Adds that glossy richness that takes it from good to better.
 
Getting some pad Thai from the local Thai place.

Here you go. When I made it I used Cajun bulk sausage, skipped adding cajun seasoning and replaced the can of diced tomatoes with a can of diced tomatoes and green chilis

So... for St Patrick's day I always make corned beef and cabbage. Not this year...

Ya know... it was really tasty. I liked it enough I would eat it again.

That cucumber tomato feta salad... I make it once a week but add some Kalamata olives... it's really good.

It's not an easy transition... and it hasn't gotten any easier.

As long as the wife lets a bit of dairy fly under her radar I can probably keep it up. I'm eight weeks into this and have lost 16 lbs. A couple three more months of this and I should be pretty close to what I feel is a good weight for myself. Then when I'm there... meat will become and exception and vegetables will remain the rule.

There really is a reason that the US is the most unhealthy nation in the world...
 
Besides... if I don't get healthy and drop some weight... I'll be toting around a two step ladder to get in and out of my 6inch lifted on 33 inch tires Bronco II. I don't want that...

I'm gonna have to pick up a box of muffin mix... been forever since I've baked muffins.

I made portabella mushroom and grilled onion paninis with seasoned oven roasted potato wedges and broccoli slaw. The closest I've been to a "burger" since 2021.
