What’s for dinner tonite!


Clean out the fridge night in this house. YUMMM.
 
I'm gonna have to pick up a box of muffin mix... been forever since I've baked muffins.

I made portabella mushroom and grilled onion paninis with seasoned oven roasted potato wedges and broccoli slaw. The closest I've been to a "burger" since 2021.

Yesterday....

I taught a "campfire cooking" class at a campus consisting if "Skoolies" - old school busses converted into RV's and toy hauler RV's. In 2 hours, I taught and demonstrated different campfire cooking techniques. I did kabobs, on a gril/grate ove the fire, hobo dinners (just wrap everything in a foil package and toss it on the grate or directly in the coals), mountain pies (think "hot pockets cooked in a long-handled 2 piece thing like a small waffle iron), macaroni and cheese cooked in a Dutch oven, and pizza. At the end, there was nothing left for me to eat. They loved it and ate it all.

I forgot my pizza dome and had to improvise with disposable aluminum roasting pan I bought at Walmart along the way (almost 3 hrs from home when I realized my mistake). It worked fine. But I had to lay a pot on top to keep the wind from blowing it away.

As a bonus round, after class was over, I tried brownies in the Dutch oven. It was too hot. So I needed up with a crispy chocolate crust full of warm brownie batter. My only failure on the whole day.

I'd say the M&C has a nice tasty crust. And when you hang out with folks in RVs and say 'free food', don't expect there to be anything left. Ask me how I know...

Yeah. But none of them complained of gastrointestinal distress this morning. I consider that a great success.

There was so much on my mind leading up to this trip. The Livvy had her injury and really threw my planning out the window.

That sounds like what I eat at work on Sundays when the cafeteria is closed. "Vending machine cuisine"
 
Honey thyme glazed pork tenderloin with baked potatoes and green beans from Hello Fresh.
The wife orders it and I just cook whatever comes in. Putting her in charge minimizes complaints and has the added effect of expanding her horizons.
I'm Italian and love to cook anything but my wife is Irish and until recently all she ever wanted was red meat and a potato and she considered ketchup an exotic spice.
 
I made a London Broil (medium rare), mashed potatoes, and green beans.
 
Salami sandwich with Swiss. We had a late lunch at Golden Corral so...

Thank you. She got a torn ACL last Monday. The pain meds are working and now my job is to keep her from running and jumping for a month. That's like telling a fish not to swim.

How on earth do you do that? I'd have to keep Goober in a crate day and night.
