Using Scan Tool To Monitor/Check Motor Health?

Can anyone drop a basic knowledge bomb about the 4.0 SOHC and some scan data I should check, monitor, or be on the lookout for?

I've got a 2004, manual 4.0 SOHC. I've also got a (not-fancy) scan tool/code reader that can display live data, graphs, record, and all sorts of fun data stuff.
My truck starts/runs/drives fine. It's little old. I know I've got a minor exhaust leak, and occasionally she might smell slightly rich. Get meh MPG but within expectations. No concerns, No check engine lights... but I'd love to know how to interpret the data, and maybe notice some things or be on the lookout for values drifting.

What scan data should I be looking at to check motor health?
What should my fuel trims look like?
What other data should I look at and range I should expect?

-Please elaborate if possible, with info about cold start, idle, rpms, hot start, warming up, drive test etc. Knowing how and when to interpret this data is vital.
