The low oil sensors I have seen in small engines depend on capacitance. If there is oil contacting both 'sides' of the capacitor, the measured capacitance is lower/higher than a bared capacitor. Beyond that I know nothing about them.
I think the computer will apply a certain voltage to a circuit, and with the capacitor working will get a certain frequency (ring circuit?), and with it 'shorted' or 'open', a different frequency, and light the light. more or less.
