I'd use a heavier oil than usual... instead of 10-30 use a 15-40.... will not all run to the pan as fast, before startup pour some over the valves, or at least in the filler cap (your oil is going to all be in the pan)
I would fill it full of rat poison as well engine bay, and cab.... it's winter (maybe you will find them all before it gets hot, but you do not want your truck to become a giant rat nest) and it will.....
make sure you don't have any vacuum lines that are cracked (dirt dobbers have gotten into my fuel lines on a carb, once.... through the intake. it was not cool.
Baking soda like in the fridge will be as good as charcoal if you get the big boxes, and you won't have to smell charcoal.
Wax the living wee out of it, tarp or not, you never know if a raccoon is gonna jump on it and have claws that touch the paint or not.
polish any chrome and leave a residue (it will rust)
don't park it where a tree can grow into the engine bay (yeah, I've had long projects do that)
If I were you I would yank the wheels regardless (if they sit too long, moisture will stain them from the brakes)
grease every fitting you can, oil the rest, use a 3 and 1 oil in the locks, door hinges and handles, oh and hood..... (wd-40 wont' last long) and you don't want them seizing.
That's just my thoughts.
