I'm running too cool

I disagree

If the issue is present when the valve open, how much time do you think it will buy you by having it open slightly sooner?

I agree with MKAG, very little time, and when moving slowly, less air will be moving past the rad. The issue must be coming from somewhere else, clogged radiator, fan not doing it's job or coolant circulation(again, clogged rad.)

Id agree with you and makg if you two were right, but you arent. 40 extra degrees to work with is a lot of room to head off potential trouble. at least 30 seconds, which is time to get off the road and cool down in a parking lot.

I know what its like to drive in 110 degrees. my 68 el camino with a highly modified 327 hated idling and even with a mezier electric water pump and 2 pusher and 2 puller fans through a massive radiator still hated stop and go traffic in Austin, tx. Id watch the temp crawl higher and higher, sweating my balls off until traffic started moving and I sure liked it a lot better when I got some good air flowing through and the temp went back down to 160 degrees.
