Believe it or not I still have meat. It's good, none of it looks to be freezer burnt. Most of the reason that I still have it is because my mother refuses to eat it.. and since she decides most of the meals in this house I don't have many options as to what I can cook.
The other day I made some soup. It was good, basically I just threw some random FRESH herbs into it. It was VERY flavorful. It had carrots, onions, mushrooms, noodles, etc. Beef broth is a must, bear meat doesn't make it's own broth well. I prefer canned cheap stuff, the bouillon seemed to flavor the meat as well last time I made stew. I tossed some flour (a very small amount) in to thicken it, it looked horrbile (white chunks) until about the fourth hour of cooking it. Then it was nice and mixed in with the broth. I snapped a picture in my five hours of boredom. And yes, that's a giant chicken cookie jar. My kitchens rocking a chicken theme while the rest of the house is western, it looks damn good.
The next day I made speedies, soaked them for a couple days in pepper, Worcestershire, and A1 sauce. Those were delicious. I stuck some mushrooms on the skewers with them, it looked nice and sounded like it would be good but they soaked in the charcoal/lighter fluid flavor. Would have been nicer on my electric grill but that doesn't cook as well.
Then I made jerky. Mmmmmm.. I'm eating it right now.
I'm gonna try to get another bear this year as well. The meats delicious, and I still want that half mount I showed on here. I went with a rug for money reasons. Should be done around November/December or later depending on when the guy gets around to it.
