Engine Knock Fixed mpg's still low

I've had engine knock problem for almost 2 years, decent in the city crap on the highway Finnally changed my originall spark plug wires at 110 k and put in 4 iridium spark plugs and I can use OD at 80 km/hr. My originall wires looked perfect so I thought they were fine.
Truck runs very smooth but it didn't really solve my low mpg's. Only getting 17.8 mpg's city maybe 22 highway. Spark plugs are new, pcv valve, fuel filter done 30k ago and I never lose a drop of oil. Its a 96 2.3L. Out of ideas I heard a weak ignition can clog a cat converter not sure if that might be the problem
