Yes, there are many options on this, but only a few make sense or maintain value. Personally, if you owned the 2000 or whatever vehicle you plan on modifying, I would strongly suggest, as others may have done...putting a more current motor into the 2000...
Use that if possible to drive until you can afford the title for the 89...or...as suggested, sell the 2000 and get the title for the 89.
I'm one of the first to go with preserving the 89 if possible...you have the best of both worlds if the truck is "mint" as you say...but the frame would be my concern on any vehicle...and you don't say where you are from or I missed that part...but some areas are just frame eaters that love to nibble away at frames in places you wouldn't think...
So...is the frame on either vehicle "mint" and if so...what are your other options currently?
Is the 2000 only on the block because of the high mileage?
Don't let that fool you...257,000 miles is nothing on a good motor...the 3.0 is known for durability above all other things...I just scrapped one that had nearly that on it that ran like a top and didn't burn any oil...but I scrapped it mainly because it needed a new exhaust and the manifold bolts didn't look like they would come out without snapping a few...meaning I would have to remove the heads and pay someone to pull the snapped bolts out...between that and the cost of the entire exhaust system I was already looking at $600...plus...plus...plus...
