Bilstein makes great shocks... Fox is even better still (and they can be easily tuned to your application), though KYBs (a little cheaper) could probably work for you also.
XJ coils on a solid axle however are stiffer than the same springs on a TTB axle. Whatever issue you're having almost guaranteed it isn't because the springs are too soft (if anything, they might be too stiff).
I misread your first post, you said trail, not street...
What I'm guessing is happening is your shocks might not be damping enough when your truck tosses side-side on the trail. I actually had this a little bit with mine before I put Fox shocks on, though mine wasn't to a point it was sketchy or anything.
The other possibility is maybe your rear springs are radically softer or stiffer than the front (this would cause the truck to suddenly pitch sideways when one tire on the stiffer-sprung axle drops off a ledge)
