What hitch to use?


rear bumper has 200 lbs max tongue, 2000 lbs max trailer. if your specific vehicles tow capacity fits within those parameters you're good to go with just the bumper.
 
A class III receiver with a 2" tube is the best general over all choice with the most options. A Class II 1 1/4" would probably do the job but options are limited. If the bumper AND it's mounts are in good condition, you might be ok for a one time tow but I wouldn't trust it for regular use. It all depends on the trailer you are going to use and if it is yours or someone else's.
 
I use a 2" receiver and whatever ball is necessary for the trailer. I have lots of various sized balls.

I saw a Jeep at it's max towing capacity a few weeks ago.

The crappy transmissions they had in the 1st generation Grand Cherokees yeah, that's probably even exceeding the capacity LOL. The transmissions in the XJ's though seemed pretty bulletproof. After my 2nd Grand Cherokee I'm not much of a Jeep fan anymore, way too many issues with that one, compared to the first one I had that never gave me any problems and I beat the crap out of it and overloaded it towing trailers pretty frequently.
