I thought of doing the same thing...you can buy replacement rubbers for them from LMC but they are quite expensive. If the truck is just a farm vehicle then you're probably not interested in impressing anyone who rides in it...but they can be much noisier without the carpet or some sound deadening...
If you have a carpet store nearby...those riubber backed squares they sell for basement floors are actually pretty moisture resistant and will conform to the floor panels with a bit of heat. I was quite surprised when I put some in my truck for sitting on while working on the bare floors because they moulded almost perfectly to the floor during the warm weather...and are relatively inexpensive...then toss a floor mat on top to keep things in place.
