Shock valving???

I've decided to run Bilstein 5150 shocks on my truck. Only thing is, which valving do I choose?
They give the options of light and medium. I'm assuming med valved would be good for the front, correct me if I'm wrong. And not so sure about the rear, though leaning on medium due to cargo weight.

The truck is a SAS'd 3rd gen reg cab 7' bed on 37''s with 5.5'' progressive rate Early Bronco coils up front and 6'' chevy springs out back. The truck will be a DD, offroad will be mostly trail rides, rocks, some mud. Also a spare 37'' will be mounted in the bed w/ a high-lift, and few other tools.

I'm still in the process of building, and shock come last, but I'd like to know before i get there. Anyone? Feel free to school me on shock valving.
 
I went with the BC Bronco's coils, and Skyjacker 6" leafs. Bilstein 5150's, Single 255/70's in the rear and dual 170/60's in the front. I figured that since my selection of front coils was fairly soft that it wouldn't hurt to add some stability with softer dual shocks rather than just a more stiff single shock. I've had a chance to drive the truck a bit after the SAS, and I couldn't be happier with my selection. The truck is extremely stable on the road.
