First, take the truck to a shop and have the AC discharged. Then, it's basically a matter of unbolting everything you don't need. You'll need a shorter serpentine belt after you remove the AC compressor. You may need to remove the radiator to remove the condenser, although you might be able to get away with just unbolting it and sort of leaning it back towards the engine.
If you can't find a shorter belt, some auto parts houses sell A/C eliminator brackets that essentially take the place of the compressor. Usually not too expensive and save you the trouble of changing belts if you are having trouble finding one.
