Can someone advise on how to disconnect the e-brake bracket from the shoe now that I have the **** thing apart?

You have to pry open the little horseshoe clip. The ebrake cable should just slide out as you roll the assembly. I've always found getting it back on to be the hard part. You have to compress the spring cover while sliding it back on. Make sure the ebrake is as relaxed as you can get it.
 
Another nasty rear drum brake like my '02 Ranger. Time for the Mustang rear disc conversion.
