I think I should have actually started this thread by sayin that I needed extra torque and power for towing my boat instead of racing ricers.

If you did, you would get people like me saying "Swap in a 4.0 or v8"

You shouldn't have any problems pulling that boat. I use to pull my 14' trailer with two four wheelers and other assorted goodies with my truck with very little problem before the conversion. I know I won't have any problems now. You can get the SCT X3 programmed for either performance or torque packages from Bamachips or Rogueperformance. I know I'm leased with my results. If I want to go out and run ricers, I just use my 3.1 liter stroked 1973 240Z or my wife's 350Z for that. Much more interesting.
