I have a breather on the passenger valve cover of my 305. Could I cap the PCV vacuum on the carb and run another breather on the driver side or even stick with the single breather? Or should I just run a PCV valve and call it a day?

Run it, actually put a new one in there. It pulls crap (moisture, fuel vapors, etc) from your crankcase to help prevent sludge. The breather is there to allow fresh air into the crankcase when the PCV is intaking vapors.
