I had my wife talked into a v8 swap but my taurus bit the dust and it really ain't worth fixing.
So here is where the help comes in. I need to know what kind of mileage you all are getting and what is your combo is so I can convince her that it won't be all that bad on mileage.
I know they probably won't get great mileage but if I can get about 19 to 20 with 3.55 gears and a t5 I think I can keep her on the same path.
If you could post what engine (cid) what trans(with stall if auto)and what rear gear, plus combined mileage.

Personally for milage and power, I would look into a 2.3 with a turbo. I had a 200hp 2.0 turbocharged 4banger (Plymouth Laser, rebadged Mitsubishi Eclipse) that wasn't much ligher than my Ranger, no matter what I did it wouldn't get any worse than 20mpg in the city, and would get close to 30 on the highway.

It won't have quite the torque, but will be a vast improvement on a 2.0.

The milage you are wanting is about what the much sleeker 5.0 Mustangs got on the highway.
 
Stockish 5.0, T5, 3.55 gears, Supercab, big heavy wide wheels/tires, 25mpg highway, 16 around town while beating the snot out of it. Much, much better than the stock 4.0 I removed.
 
'97 Ranger regular cab, short bed with a stock 5.0 HO from a '92 T-Bird, AOD, 3.73 gears, 255/60-15 tires on stock steel wheels got 24 mpg combined.

I think most stock-ish 5.0 swaps will get better mileage than what you pull out. Mine got better mileage than the 2.3 I pulled.
 
yes provided you run a fuel injected motor fairly stock with a reasonable gear i dont see why 18 to 20 mpg would be a problem.
I have a 5.0 mustang with a t 5 and 4.10 gears that gets 20 ish with me beatin the snot out of it. A ranger my not be as aerodynamic as a mustang but a 2wd probly dont way much more than a mustang.
 
I am looking @ running a stock 5.0 cam with afr 165 heads a performer rpm air gap intake with a 650 holley.
as far as weight my ranger only weighs 2700lbs with the 2.0ltr so I am thinking I should be ok with the mileage

You are still pushing a brick thru the air compared to a third generation Ranger.
 
My 97 turbo eclipse made 375 hp and I was getting 24mpg city/highway
