new sensor+gauge too high?

I have a new engine (2.3L) and am randomly replacing stuff. The truck runs warmer-per dash gauge-than my old engine but it ran cold. This one runs no hotter than 170-175 when using a meat thermometer, lol. But I replaced the temperature sensor yesterday and now it still runs the same temp. (170), but the dash gauge reads HOT! after about 1/2 mile of driving (with old sensor it read about a quarter of the way up). Everything seems fine except that reading on the dash. And I did burp it, though I'm doing that again later with the radiator cap side jacked up a bit.
Now with the old sensor my little, cheap Ford code reader said "Coolant Temperature sensor out of specified range or ECT out of range" (code 21). With the new sensor that code doesn't appear indicating the old one was faulty, right? But I'm not driving the thing around with the dash gauge freaking me out. I'm thinking of putting the old sensor back in, mistake that it may be. Help! thanks-alan

PS: do new engines-500 mi.-run hot at first?
 
Well, it appears as if there isn't much interest but I'll share the remedy anyway. Replaced the new sensor with the old one, after cleaning it including some blackish deposit on a portion of the element, and went through the whole install process and success.
Still runs around 170, gauge remains around the M to R position on "NORM" and there is no code violation anymore. So, bad new sensor I guess.
 
Yes you have to burp it from the heater hose its the highest point where the water goes you might want to take it to a shop just for them to check it its better to be safe then sorry.Just to ask a stupid question.Do you have a High school that has a Auto shop class at the high school if so if you can go talk to the ROP shop teacher he might be able to help you and be really cheep mabey a pizza and soda for the kids I have a shop teacher at my local High school or local Collage worth a shot
