I installed an electric fuel pump on my 84 Bronco 2. I am pulling the mechanical pump and putting a block out plate in its place. Can I pull the push rod for the pump out without affecting oil pressure. I know on SBC they say remove it but I can’t find any info on the 2.8L. Anyone done this in the past?

I did. Yes, just pull it out. I also made my own block off plate. This is a very worthwhile modification and will stop fuel delivery problems in hot weather. You just have to find a reliable aftermarket fuel pump. In this day and age that can be difficult. A lot of junk out there.
