maximum tire size

Ranger 1988 vintage what is the safest tire size I can install on a set of 16x7 explorer wheels with out rubbing ? Truck is stock .

At the top of every page is the "tech section". I got the following from there;

But I've run bigger than the link posted with slight rubbing. It depends on what you're willing to put up with.

I saw that and it makes no sense to me. I don't understand those sizes. I am a traditionalist and I need 225/70/16 or something like that.
