The tires on my Ranger are going to need to be replaced soon (225-70/15) and I want to go with one that fills the wheel well a little better. I had 31x10.50's on my 2wd 03 Edge and they fit great and didn't rub on anything. I'm thinking of going with 265-75/15's on my 11 2wd XLT, am I going to have any issues with that size?

Do you care that your speedometer and odometer won't be accurate? That's one issue that comes to my mind right off the bat.

Yep if you go with a different size your speedometer and odometer will be off. more so with the speedometer. If you go bigger tires then your speedo will show 55 mph when really you are going 60mph or more depending on how much bigger you go. If you go smaller tires then your speedo will show 55 mph when really you are going 50 mph. I think there are calculators online that will show you the difference if you go from one size to another.

I can't tell you if they will fit. But, according to the online convertor tool, that will be about a 30.6" diameter tire, about 10.4" wide. That doesn't sound terribly huge. Measure what you have now and see how much clearance you have when you turn the wheels. Then imagine about 1.75" less clearance on all sides. That's about where you will be with the new tires.

The speedometer can probably be corrected to read close to actual speed when you are finished. But I'm not sure how to do that on such a new vehicle. It used to be an easy gear swap at the transmission or transfer case.

Check out the "How To Tech" articles about wheels and tires. Maybe someone will still chime in here about a similar vehicle running the same size tires you want.

My speedo is already off, it says I'm doing 5mph faster than I am, so its not an issue and I can correct it either way. Went by and talked to the tire guys today and that size is going obsolete and is hard to find out here, so I'll probably go 30x9.50. We test fitted a 31x10.50 and they clear but I din't like the look without a lift.

235 75 15 is an even more common size and about a 30x9.50. (Maybe a tad bit smaller, check the calculator on the tech page). You’re speedo should read correct if it says you’re going 5mph too fast now. Just realize you will lose some power and gas mileage also.
