Installing a 351w based stroker into a 1999 xlt reg cab

I have been looking at a V8 swap for my ranger since i have come to realize hopping up the 3.0 isn't worth it.I just scored 2 351W for an amazing price of free. The first engine is a complete with GT40X heads, a custom cam, a world products manifold. It has about 8,00 miles on it. The other is just a block that has been machined and set up for a 427 stroker kit minus the internals. My dad used the first engine in his kit car for a few years then pulled it out and put it on a stand, been sitting about 2 months. He started building the 2nd engine only to sell the internals he had for all forged stuff. He built engine #3 and it is being used in his kit car, running a 2 stage nitrous system on a 427 stroker. I thought about slightly mimicking his build using a the bare block and swapping the heads and manifold from the running engine and buying a forged stroker kit, along with a single stage nitrous set up. My question comes to dealing with the electronics in my ranger. If i use a 351 with duraspark ignition and a carb, what do i do with like lighting, wipers, horn etc? Are they all ran through the computers in the vehicle? do i need to rewire the entire truck? I am assuming i will need to create a new fuel system. will explorer motor mounts work with the 351? I plan on using this more as a toy than a daily driver, but I want to keep the majority of the electronics working like the lights, wipers, horn and radio. Does anyone sell a manual rack and pinion for the ranger?
