You can drive most engines minus a t-stat for a little while. During the summer it is not as big an issue as winter for heating. I would not recommend driving a long time without a t-stat though.
 
Heat transfer

When you remove the t-stat the water tends to flow from the radiator tank and thru the tubes too quickly - the t-stat provides enough restriction to let the water flow more slowly thru the radiator core and thus transfer more heat to the cooling tubes/fins as it passes thru. So, even without the t-stat, it helps to put a big washer in there, or even an old t-stat with the middle removed (the part that opens and shuts when it reaches the designed temp) to slow the water down enough to provide cooling. Hope that makes sense . . .
 
Its never good to run a modern day engine without a thermostat. In the diesel world we call them regulators which is what they actually are. You cannot run a diesel without one. Older engines you could get away with it. Modern electronic engines run hotter than the older ones. If you dont have anything there to regulate the coolant then it runs through the radiator so fast that it doesnt have a chance to cool so you can actually cause over heating without one. They are there for a reason. If you are over heating because of the thermostat then you either have a bad one or you have another problem. I dont mean so sound harsh but you really have nothing to gain by removing it. You have to remember that by not coming up to operating temp then things dont expand like they should and that will cause premature wear to the engine. When the cooling system is working correctly then you should only be getting 8 to 12 degrees (F) drop from top to bottom of the radiator.
