Can anyone tell me how many ground points my 87 2.3L 5speed ranger needs, and where/what they need to be attached to? Thanks.

Just general.

Battery negative cable should go to engine block, often on starter motor bolt, this is for the starter motor and alternator.
If this cable has a smaller lead at the battery then that should go to Radiator support(for head lights)

The engine head or block should have a ground strap to the Firewall, grounds computer and gauges

Also there should be a ground strap from engine block to the Frame, engine and trans sit on rubber mounts so for good frame ground you need a strap, for the tail lights, and often fuel pumps and fuel gauge.

The rad support does need a ground as well as the inner fender where starter relay and other electrics are located.
If there was no smaller wire on the battery cable then add your own, from battery or engine block to both inner fender and rad support.

Because metal bddy parts are bolted together don't think they will be grounded, many body parts are painted first and then assembled at the factory, so paint isolates them, when in doubt ground it.
And remove the paint for good connection on body panels, then spray clear or paint over it to keep it from rusting
