Things like radiator size and location and which V8 and what year/belt setup make for a lot of variables.
General rule of thumb... as big as you can.

Ideally, you want a puller fan as well. I also agree with 85_Ranger4x4 in saying you want the largest you can really fit. Either single with shroud, or two smaller fans with shroud. Whatever fits your application the best.
