Ive got a kicker cvr and a 2 channel amp. I was wondring if I can hook up a channel to each side of the sub, instead of paraleling or running in series?

No bridge the amp and wire in series down to the lowest ohm possible

Find what the lowest ohm your amp is stable to and wire accordingly. If your amp is 4 ohm mono stable and you have dual 2 ohm subs, you would want to wire in series.

And yes, you could wire each channel to a different VC. In fact, you could wire a different amp to each VC. You just wanna make sure they are seeing similar voltage and same signal.
