I love chili, but suck at cooking. Can someone give me some good recipie ya'll use that even my 2 yr old can eat?
 
2# ground beef browned
can of kidney beans
2 cans tomato sauce
chili powder to taste appr 2 tablespoons
1 teaspoon cumin
1 onion
1 clove garlic
 
Many years when chat night was in its hay day there were some good recipes thrown around. That being said if you are giving out a recipe to someone who's a novice in the kitchen it's a good idea to give them complete instructions on what to do with the ingredients.
The above recipe sounds like a winner by the way, I'll have to try that.

If you use cumin, use the seed (fresh not old) and grind it (I use a mortar and pestle) before toasting it in your cast iron skillet

If your two year old starts eating real chili early, then you will have passed on something important.
Otherwise, just buy storebought and dump in a microwave dish. That's good too! Have fun!!

Couldn't get frsh cumin seed. Had to get it in a bottle ground. I added some stewed tomatoes, and some bay leaves to the foresaid recipie....
 
I call my In-laws and have them send my a case of Nalley's Chili con-carne w/o beans.
 
heh, copperhead, I was tempted. I had the can in my hand.... hmmm.... velvetta and rotel, or in the chili rotel... hmmmmmm the velvetta won...
 
Chili is pretty simple to make...and it's a great place to start cooking...

You can substitute the kidney beans for any number of others...depending on how they react...I used garbanzos (chick peas) and they are great...and less gassy...but they may affect you differently...

Only other ingredient I would add is the bay leaf...or two...but take them out before serving...they can be lethal to a youngster...if swallowed whole...

Oh, and some hot sauce for your serving...puts wing in your wang...
 
2lbs grouned chuck
2 cans dark kidney beans drained
2 cans light kidney beans drained
4 cans tomatoe sauce
2 cans whole tomatoes
2 packages of mcormicks chilli powder
2 jars sliced mushrooms drained
2 bags of birdeyes pepper and onions

brown hamburger and drain
put all ingredients in large pot and simmer for 30 mins

I don't have a recipe, I just cook. I use crushed tomatoes instead of tomato sauce. One thing you might try is instead of browning your ground beef in the pan, make it into patties and grill them outside. Get the smoky flavor. Then crumble them into the pan with your other ingredients. I also like to get some uncooked Chorizo and add that to the chili. Don't drain it like you would ground beef though. You want all the goo that comes out of it. And don't look at it either, disgusting looking stuff, but more flavor than the law allows. Another great seasoning to add is Montreal Steak Seasoning (some call it grill seasoning).
 
I've made chili many different ways but I always throw in tablespoon of horseradish.
 
Hope you guys like this:

One large can Puree (add one can of water with puree)
One can diced tomatoes (no salt added)
One can tomato paste (organic)
2 cans of butter beans
1 can of chili beans (do want you want here)
1 large Onion
1 large red pepper
1 large yellow pepper
3 large chicken breast
2 tps of chili powder (season to taste)
2 tbs of onion powder (season to taste)
2 tbs Cumin (season to taste)
2 tbs of Rosemary Garlic powder


Cut up the onion and peppers and brown the onions and peppers in large pot (with top)
Add puree and one can water
Add tomato paste and diced tomatoes
Add spices and bring to a boil and then to a simmer.
Cover the pot for 1 hour.
Stir the mixture and taste it and then add more seasoning if you think you need more. Let simmer for another hour.
Add the beans to the mixture and simmer for an hour with the top off to thicken up the chili.
Meanwhile, grill the chicken with the Rosemary Garlic. Grill the chicken until it is tender (not well done) Cut the chicken into nice size bites and add to the chili and let simmer for one hour.
If you want it thicker then take of the top to let it thicken up some more.
This is a very healthy dinner and very tasty. I have been making this for several years and all my family and friends love this chili.

Ooops. Sorry, guys. I forgot to say drain the beans and rinse as well. Some people don't like to rinse the beans. We do!!!
