I have a sheet of 3/8" steel, will the 3/8's hold up to a winch, or will I be better off going with 1/4"? Any help is appreciated
 
3/16 should be fine for a ranger, but even 1/4 can fail. do you have a design in mind, and what sort of bracing... that will really help with an honest straight answer.

Many aftermarket mounts are constructed of 3/16" steel. It's all in how you design the thing. The thinner metal can help save some weight as well.
 
if done right, 3/16 will be enough
 
On my ranger, I have a piece of 6" wide 1/4" plate mounted right between the frame rails. It's held up fine sofar.
