How's the fuel pressure? 1st thing to do would be to check for codes.

pop your plug boots and give the porcelain a twist. I had one time i replaced my plugs, and ended up cracking one putting them in.
also, is it a chug at speed?
if so, you may have a lose ground, causing the truck to stall and then catch momentarily. i had that problem.
