Not really dinner. I'll go to my Mexican place in a little while. No, I'm enjoying a special beer conjured up by my favorite local brew pub. An Engilsh barley wine style brew that aged for about 2 years in cognac casks, then 9 months in fresh Buffalo Trace mash #1 bourbon casks. Here's the review I just left in their Facebook page.

"Wow! Just opened my bottle. I don't consider myself a connoisseur or professional taster in any way. I bought this because I don't think I've ever had a beer that was aged/processed this way. I dontknow all the "key words and tricky phrases" used to properly describe beer, wine or liquor. But here is my unprofessional layman's review.

This is nice. Smooth, creamy, sweet, but not overbearingly sweet (and by "sweet" I mean sugary kind of sweet. Not the normal "sweet vs dry" description). Maybe kind of chocolaty and nutty. It's a rich flavor, very pleasant for sipping. I don't detect any acid quality, which normally gives me indigestion. I wish I could afford a case of this.

5 stars from me, an untrained average Joe."

Oh, dang. 15% maybe I should just cook dinner here at home.

pile of wavy potato chips, hot dog with ketchup & mustard, sizeable(big) bowl of Cinnamon Bun vanilla ice cream.
 
Some kind of leftover Gen Tzoe chicken and steamed veggies. And the last bottle of HI shoyu will be brought out.

Dunno what to call it other than an experiment. The turkey sausage patties proved to be a poor choice and I honestly hate to admit it, but the grilled onions weren’t really working with it as well as I had hoped. Eggs also got a little overdone because it started pouring rain and I had to wrestle the grill onto the covered patio. Gonna make some changes the next time around

And as long as I am here... Beef Barley Soup (pretty sure I posted it before - what can you say, I am old, lazy, and it is a go-to simple)....

I'll also ask, anyone got a good "breakfast casserole" recipe? (think ssg, egg, chz, hashbrowns baked in oven) - rather trust you guys than the web.

I saw it as a breakfast thing on YouTube where they used waffle fries, kraft singles cheese, ham, bacon, and an over-easy egg. I have been experimenting from there. Yesterday I did just an over-hard on a hash brown patty for a grill snack. Tonight I tried doing something else with it. Next try will probably be the hash brown patty with different sausage and an over-easy egg with whatever cheese is on hand and see how that change goes. I’ll figure out what to call it when I get done refining it, lol.

I don’t do many casseroles although someone at church makes a pretty good breakfast casserole. When I was off at college I started making a breakfast scramble or breakfast mess. Years after I started seeing those on the menu in restaurants. I also called it my one-skillet breakfast. Cook up the meat first and plate it, then start the potatoes (I’ve used everything from fresh potatoes, hash brown patties, frozen hash browns, tater tots, golden crowns, and French fries), add any seasonings and onions when the potatoes are almost done, break up the meat if you need to, dump it back in the skillet with eggs and cheese, then just scramble it up. Left any oil/grease in the skillet for the potatoes, btw. I do much the same on the flat top frequently now.
 
It sounds like lil blue was working from a recipe I recently saw Kent Rollins, the cowboy cook do on his YouTube channel.

I rarely do breakfast casseroles as you may think of them. I rarely use recipes for breakfast stuff except for pancakes or biscuits.

One of my favorite things is to make what I call breakfast mess. I start with a bug cast iron skillet. Chop up potatoes and get them frying. When the taters are just over half way cooked, add chopped onion. Then sausage. I'll sometimes cook the sausage or bacon separately then crumble it into the taters and onions. Or sometimes just crumble the raw sausage into the pan and let it all cook together. Then I'll break some eggs into a bowl and whisk them up frothy with a little milk. Dump a generous heap of shredded cheddar into the egg mix and stir it up good. Add pepper if you want.
Once the taters/onions/meat is about finished, pour in the egg/cheese mixture. Stir briefly then cover the pan so the heat and steam helps cook the top. Maybe stir it again after 2 or 3 minutes. When it's cooked to your satisfaction, serve and eat. I actually like it to start forming a slight crust on the bottom. For more fun, sprinkle generously with powdered Chipotle and serve with a dollop of sour cream.

Don't ask for quantities and measurements. I don't measure that early in the day.

Corned beef is a great substitute for the sausage or bacon. And I'm sure chorizo would be good, too. I'm considering that for an upcoming camping adventure.

It's breakfast. Cook stuff you like and you can't go wrong.

You would be correct good sir. Sounds like your breakfast mess is pretty similar to mine.
